Ingredients

  • 8 Cobelén olives
  • 125 g cream cheese
  • 50 g foie-gras
  • Olive oil
  • 1 sprig curly parsley
  • 1 sprig coriander/li>
  • ½ lemon
  • Salt
  • Black pepper/li>
  • Bread

Recipe

Chop the parsley and coriander. Mix the olive oil, cheese, lemon juice, parsley and coriander in a bowl.

Combine all ingredients with a fork until evenly mixed.

Cut the foie-gras in small pieces and place half the pieces in the ramekin (a baking dish with tall, straight sides). Pour ½ the cream cheese mixture into the ramekin. Add the remaining foie-gras pieces and pour the rest of the cream cheese.

Cut the pitted black olives in half, or in slices. Use the chopped olives to decorate the ramekin and add more parsley and coriander. You can even add a small amount of black pepper or nutmeg if you like a spicy kick.

Fry the bread in abundant olive oil or, if you prefer something lighter with less calories, dice and toast the bread.

Serve the ramekin as the main course with the toasted bread on the side, so each person can serve themselves.
