
Ingredients (Serves 4)
- 1.5 kg chicken cut into pieces
 - 4 ripe tomatoes
 - 150 g Cobelén pitted green olives
 - 2 onions
 - 2 green peppers
 - 2 garlic cloves
 - 500 ml white wine
 - Olive oil
 - 5 tbs flour
 - Salt
 - Pepper
 - Rosemary
 
Recipe
Season the chicken pieces with salt and pepper, dust with flour and fry in a skillet with a little olive oil until well browned. Drain the fried chicken on paper towels to remove any excess oil.
Sauté the onion and garlic in a skillet with oil until golden brown. Add the green pepper cut in thin strips. Sauté for a few minutes, then add the crushed tomatoes. Mix well.
Once the vegetables are well sautéed, add the olives and cook a few minutes.
Season with rosemary, salt and pepper. Finally, add the white wine and fried chicken. Bring to a boil, cover the pot and cook over low heat until the chicken is tender.
